Veggie Packed Lunch Bowl

This truly has been a go-to for me. I think its simple, easy to throw together, and packed with colorful veggies! Nutrient density for the win…The best part about this recipe idea is that you can add in or take out whatever you want when it comes to the veggies. This particular combination for me is perfect!

Ingredients:

  • Spinach

  • carrots

  • cucumbers

  • sprouts

  • tomato

  • avocado

  • spike seasoning

  • hummus (optional)

  • olive oil

  • protein of choice: I usually use wild caught tuna, smoked salmon (one pictured from Whole Foods) or chicken breast!

Instructions:

  1. Place spinach or choice of greens first in a bowl.

  2. Chop all the veggies to desired size, drizzle olive oil & spike seasoning on top.

  3. Add your protein & enjoy!
