Banana, Oat, Chia Muffin

When I tell you these muffins lit my whole day up, I mean it. I was weary of how these were going to turn out, but they were perfect. The muffins provide fatty acids, fat, fiber & over all good taste. I plan on eating this as a quick snack on the go, or even at home before I go to a workout. Scroll down for recipe, & enjoy!

Ingredients:

  • 3 ripe bananas

  • 1 cup GF oats

  • 1 cup almond flour

  • 1/3 cup chia seeds

  • 1tsp baking soda

  • 1tsp baking powder

  • 1tsp cinnamon

  • pinch of salt

  • 2 eggs

  • 1tsp vanilla extract

Instructions:

  1. Pre-heat oven to 350° & grease or line a muffin tin.

  2. Mash bananas in a bowl, then add all of the wet ingredients. Stir until combined.

  3. Add in dry ingredients.

  4. Place batter into muffin holes, about 3/4 filled. Any empty holes, fill with water before baking.

  5. Bake for 30 minutes.

  6. Serve alone, or with some yogurt & berries!
