Banana, Oat, Chia Muffin
When I tell you these muffins lit my whole day up, I mean it. I was weary of how these were going to turn out, but they were perfect. The muffins provide fatty acids, fat, fiber & over all good taste. I plan on eating this as a quick snack on the go, or even at home before I go to a workout. Scroll down for recipe, & enjoy!
Ingredients:
3 ripe bananas
1 cup GF oats
1 cup almond flour
1/3 cup chia seeds
1tsp baking soda
1tsp baking powder
1tsp cinnamon
pinch of salt
2 eggs
1tsp vanilla extract
Instructions:
Pre-heat oven to 350° & grease or line a muffin tin.
Mash bananas in a bowl, then add all of the wet ingredients. Stir until combined.
Add in dry ingredients.
Place batter into muffin holes, about 3/4 filled. Any empty holes, fill with water before baking.
Bake for 30 minutes.
Serve alone, or with some yogurt & berries!
