Chicken Tenders

These have a special place in my heart. A super clean tender, that tastes good & even my 75 year old grandpa enjoyed. These were easy to make & quite honestly will be a staple in my home moving forward. The biggest tip I can provide is to cook them on a wire rack on a cookie sheet, so both sides get crispy. You could also put in the air fryer!

Ingredients:

  • 1lb chicken tenders or breast cut into strips

  • 1 cup almond flour

  • 1/2 cup unsweetened coconut

  • 1 tsp garlic powder

  • 1tsp salt

  • 1/4 pepper (optional)

  • 2 eggs

Instructions:

  1. Pre heat oven to 400°

  2. Add all of the dry ingredients to a shallow bowl & whisk eggs in a separate bowl.

  3. Dip the chicken in the egg then into the crumb mixture. Make sure its covered!

  4. Place on a wire rack on top of a cookie sheet, or on top of the cookie sheet directly. I would flip halfway if you are not using a rack!

  5. Bake in the oven for 20-25 minutes until cooked all the way & golden brown. I served this with born simple BBQ sauce. Picture below!
